The quest to create Houston’s most authentic pizza began with Chef Roberto Crescini’s search for the perfect pizza oven. After painstaking months of research, he chose a cutting-edge electric oven from Italy that mirrors the qualities of a traditional wood-fired oven while allowing for superior temperature control.
But the real magic starts with the flour. Chef Roberto traveled back to his hometown of Brescia, Italy to visit a small stone-driven flour mill where the miller uses ancient “slow” methods to create some of the most flavorful flour Roberto had ever tasted.
This artisanal flour gives the pizza its authentic taste and texture, unlike anything typically found in Houston.
Chef Roberto’s pizza-making expertise was further honed through guidance from Maestro Rosario Cuzzolino, an Italian pizzaiolo recognized globally for his craft. His insights, paired with the finest ingredients and technology, allow us to present a true expression of Italy in every bite.
