Venetian-Style Creamed Baccalà
centrifuged green apple and celery juice
and fava bean salad

Aubergine Parmigiana
cherry tomato confit and
buffalo’s milk mozzarella foam

Land and Seafood
veal’s tongue, cooked sous vide and then seared
and served with raw prawn and traditional
Piedmontese sauces

Dalla Costa Semolina Pacchero
stuffed with pasture-ranched butter,
Roccaverano robiola mousse,
and grill-charred leek

Riso alla Milanese
fried saffron rice dressed with
Parmigiano Reggiano and a sauce
of veal marrow, lemon zest, and flatleaf parsley

Prosecco Zabaione
siphon-whipped and served with
classic Lake Mergozzo shortbread
